Implement Profiles

• Defaults are provided in the installation folder for AMS2 (default), AMS2 Beta and PC2
• User overrides in home directory
  • %LOCALAPPDATA%\AMS2CM on Windows
  • .config/ams2cm on Linux
• Shortcuts created by the installer will select an alternative profile for the beta
• Create a UI for users to change config settings
  • Launch it if it fails on start-up (e.g. Steam errors)

Notes:

• We could reuse "Automobilista 2", "Automobilista 2 Beta" and "Project CARS 2" directories inside the Documents folder instead ...where does that live on Linux/Proton?
