Update doc to be in sync with the latest Ref Arc CloudTrail improved centralized approach.

Why?

• Since the latest Ref Arch Release: https://github.com/binbashar/le-tf-infra-aws/releases/tag/v1.17.0 we're using the following improved approach:
  • Enhancement | Refactor CloudTrail layer to: @diego-ojeda-binbash (498: Refactor CloudTrail le-tf-infra-aws#647)
    • Configured to operate as a delegated administrator in the Security account, enabling a centralized security model.
    • Set up as a multi-region, organization-wide trail for comprehensive activity monitoring and logging.
