[feature]: Ingest stats from all Hermes profiles

What problem does this solve?

Currently only the main Hermes profile is included in the analysis.

Proposed solution

Find all profiles/*/state.db within the Hermes directory, keep one entry in the state for each of them and collect them all.

Confirmed — the current parser hardcodes ~/.hermes/state.db and skips ~/.hermes/profiles/*/state.db entirely (src/lib/rollout.js resolveHermesDbPath). PR very welcome.

One heads-up: per-profile session ids are generated independently, so please key the dedup-snapshot cursor per profile (e.g. cursors.hermes.profiles[<name>].snapshots) to avoid cross-profile id collisions clobbering deltas.
