Add option to configure logging

It would be great to be able to configure logging on the CSI driver (format and level mostly).

I see `ntnx-csi` supports a log level with the `v` flag, but didn't see anything related to the formatting.

There might be a difference between v2.6 and v3.0 too - any info is welcome.
