Change in self-hosted approach?

Hello StandardNotes team - I saw the comment on a2c2255 which reads: "feat: locking last supported version in favour of one-container self hosting setup"

Is this change something you'd be able to provide some background on, and is there any danger in continuing to use the "latest" tags in the near term? I personally would love a single-container setup, so am excited to see that may be possibility!
