Improve map replay metadata docs and tests

Description

Updates the map replay/dashboard workflow, preserves custom client metadata for map artifacts, adds current test coverage, and refreshes relevant docs.

• Adds a draggable event log panel on the map UI.
• Shows custom client metadata in the map sidebar, while hiding geo fields and metadata keys prefixed with _.
• Preserves custom client metadata in emitted map artifacts.
• Adds updated tests for metadata handling, SSE output, map server behavior, and CLI replay/watch modes.
• Refreshes README and docs for the current map, replay, metadata, and artifact workflows.
