Adding product metadata for sentinel-1 normalised radar backscatter (NRB)

Additions

• There are currently two product definitions: collection 0 (_0) and collection 1 (_1)
  • Collection 0 products are currently indexed and are undergoing activate user access and testing.
  • Collection 1 products will be released in early 2026 and represent the definition of the production data. These definitions may change further if we receive user feedback during the testing of collection 0.
• Updated README

Deleted

• Removing old/outdated product definitions created by @caitlinadams that are no longer relevant.
• Note, the s1_gamma0/s1a_gamma0_scene.odc-product.yaml product still exists as samples, are indexed in prod. It is recommended these be archived with the release of collection 1.

Are the "_1" product definitions (e.g. ga_s1_nrb_iw_hh_1) the candidates for publishing? They look great to me from a quick look - I think all the issues raised during the hackathon look fixed up!
