Proposal: Update laptop recommendations for engineering roles

Apple makes M5 Pros now (assuming that was the reason non-engineering was on M5 and engineering was on M4 previously).

Went for the $200 chip upgrade from 15CPU/16GPU to 18/20 - don't have a hugely strong feeling about it, but the spare cores will probably help with longevity (and if we're all getting a bit more AI-y, spare GPU cores doesn't hurt). Kept RAM and disk the same - I scrape by with 36GB of RAM, so 48 seems plenty, and the 1TB disk does seem important.
