feat: add webhook samples and schema replay

Summary

• add canonical webhook sample events for link/payment developer testing
• retain unknown/failed Soroban events for schema guardrails and replay
• add unparsed event migration and indexer replay endpoints

Tests

• npm run build
• npm test -- --runInBand src/developer/developer.service.unit.spec.ts src/ingestion/tests/soroban-event-indexer.service.unit.spec.ts src/ingestion/tests/soroban-event-indexer.schema-version.unit.spec.ts
