Summary
This PR expands the reTerminal E10xx ESPHome documentation with clearer cookbook coverage and tested hardware-oriented examples.

Why
The existing ESPHome pages covered display basics and several basic onboard controls, but RTC, microSD card behavior, and microphone-related hardware were not documented in the same ESPHome cookbook style. This PR adds those missing examples while keeping each feature runnable as a small standalone demo.
Validation
git diff --check upstream/docusaurus-version..HEADyarn setup:links && yarn build:enyarn build:encompleted successfully. The build still reports existing site-wide HTML minifier warnings on unrelated pages.
