chore(brand): replace double-dash em-dash substitutes with colons#135

Replace all prose and link-list ` -- ` patterns with `:` across docs pages, consistent with ICP brand guidelines (no em-dashes). Leaves legitimate uses intact: shell end-of-options `--`, pseudocode comment notation, table N/A cells, stub placeholder pages, and the auto-synced Motoko changelog.
