Pull Request Overview
This PR switches the Docker build configuration from MarkLogic 12.1 to 12.0 to support the 12.0.1 release. The change is temporary and will be reverted after the release is complete.

Description
In order to support the release of MarkLogic 12.0.1 we need to switch to 12.0 Docker builds. Once the release is complete, we’ll need to revert the changes.
