Real-time brine analytics for industrial fermentation operators who are dead serious about their sauerkraut

LactoGrid connects directly to your fermentation vessel sensors and turns raw pH, temperature, and CO2 pressure telemetry into actionable lacto-fermentation intelligence. It handles FDA batch traceability, HACCP documentation, and CO2 offgassing compliance for large-scale kimchi, sauerkraut, pickle, and kvass operations. Architecture

LactoGrid is built on a lean microservices backbone — each vessel cluster runs its own isolated telemetry collector that pushes events into a central MongoDB transaction log for guaranteed write durability under burst load. The analytics engine sits behind a Redis layer that handles all long-term fermentation historical data and batch comparisons going back years. Inter-service communication runs over gRPC with a thin REST gateway for third-party integrations. I designed every layer of this myself and I know exactly how it scales.
